Fun Facts
1. Potatoes were the very first vegetable grown in space! In 1995, NASA and the University of Wisconsin-Madison sent potato plants aboard the Space Shuttle Columbia to test if crops could be grown in microgravity to feed future astronauts on long space missions.
2. They are made almost entirely of water. Even though a raw potato feels hard and solid like a rock, it is actually about 80% water and only 20% solid matter!
3. Inca farmers invented freeze-dried potatoes over 1,000 years ago. High in the Andes mountains of South America, the Incas created chuno by leaving potatoes out in freezing night temperatures, trampling them with their feet to squeeze out the water during the day, and drying them in the sun so they could be stored for years without spoiling.
4. Potato chips were invented by an angry chef. In 1853, a chef named George Crum at a restaurant in Saratoga Springs, New York, got frustrated when a customer kept sending back his fried potatoes for being too thick. Crum sliced the potatoes paper-thin, fried them until extra crispy, and salted them heavily—accidentally inventing the world's first potato chip!
5. There are over 4,000 different varieties of potatoes. While most supermarkets only carry a few kinds, wild and cultivated potatoes come in thousands of shapes, sizes, and colors—including bright purple, blue, red, pink, and yellow varieties!
6. Potatoes can generate electricity. Because potatoes are packed with water, dissolved salts, and natural acids, sticking two different metal probes (like copper and zinc) into a raw potato creates a chemical reaction that can power a small digital clock or LED light bulb!
7. Potatoes are relatives of tomatoes and deadly nightshade. Botanically, potatoes belong to the Solanaceae (nightshade) plant family. Because of this, the leaves, stems, and green sprouts of a potato plant contain a natural toxic compound called solanine and should never be eaten.
